Gastric mucin is a glycoprotein that is secreted into the stomach and functions as a protective barrier to prevent acid-induced damage to the gastric mucosa. It is an ATP-binding cassette transporter protein that transports a wide range of molecules, including probiotic bacteria, from the lumen of the stomach to its surface. Mucin also has been shown to inhibit PGE2 production by binding with this lipid in human serum. In addition, it has been found that malonic acid can be used as a probe for titration calorimetry experiments on mucins. This probe can be used to identify structural features such as glycoconjugates, which are composed of sugar moieties and proteins or peptides. The surface glycoprotein is responsible for the attachment of mucus to cell surfaces and may play an important role in preventing bacterial adhesion and invasion. Mucin gene expression is regulated by transcription factors such as SP1, SP3, and STAT6
