Cyanidin-3,5-di-O-glucoside (CDG) is a plant pigment that is found in many fruits and vegetables. It has been shown to have antimicrobial effects against bacterial strains such as Staphylococcus aureus, Bacillus subtilis, Escherichia coli, Salmonella enterica, and Listeria monocytogenes. CDG has been shown to be an effective control agent for senescent dry weight in mice. CDG has also been shown to be chemically stable and can be used as a kinetic probe for glycosidic bond formation. The chemical structure of CDG is the same as the basic structure of a number of other plant pigments such as pelargonidin chloride and cyanidin chloride. Organic chemists use chromatographic techniques to determine the presence of these compounds in food samples.
