Raspberry ketone glucoside is a hydrogenated, isopropyl palmitate fatty acid. It is a dietary supplement that has been shown to inhibit the activity of matrix metalloproteinases, which are enzymes that break down collagen in the skin and lead to wrinkles. Raspberry ketone glucoside also inhibits tyrosinase, an enzyme involved in the production of melanin. As a result, raspberry ketone glucoside has been shown to reduce pigmentation and inhibit UV-induced skin damage. Raspberry ketone glucoside may have an inhibitory effect on fatty acids by inhibiting the synthesis of fatty acids and reducing the number of fat cells in adipose tissue. This compound is also used as a crystallization aid for cellulose and as an organic solvent for food composition.
