Iota-cyclodextrin is a cyclic oligosaccharide that forms a ring with six carbon atoms. It is the only member of the cyclodextrin family that contains an iota (i) unit. The structure of iota-cyclodextrin can be described as an open, truncated cone with a hydroxyl group at each vertex and a sugar molecule at the apex. Iota-cyclodextrin has been shown to form complexes with various molecules, such as water and glycols. This property has been used to study dehydration reactions in organic solvents, which are difficult to observe due to their low concentration.
