(Z)-5-Tetradecenol is a ligand that is activated by the presence of carboxylic acids and aldehydes. It binds to the odorant receptor on the surface of cells that are exocrine in nature. This binding causes an increase in the population of these cells, which leads to increased production of fluid and proteins. (Z)-5-Tetradecenol has been shown to be active against coeluting chemicals and has been used as a chemical ionization mass spectrometry (CI-MS) standard for the detection of alcohols.
