Description

2-Ethyl-3,5,6-trimethylpyrazine is a synthetic chemical with an odor that has been described as "fruity, nutty, and spicy". This chemical is found in many foods and beverages. 2-Ethyl-3,5,6-trimethylpyrazine is a minor component of coffee aroma. It can be produced during the microbial metabolism of ethyl decanoate or fatty acids. 2-Ethyl-3,5,6-trimethylpyrazine has been used as a model compound to study the microbial metabolism of methylpyrazine and ethyl decanoate. In addition to its use as a model system for microbial metabolism studies, 2-Ethyl-3,5,6-trimethylpyrazine has also been used in surface methodology experiments, including surface chemistry studies on particle surfaces and solid phase microextraction experiments on surfaces with additives.
