N-3-Hydroxydecanoyl-L-homoserine lactone (HHL) is a metabolite that has been found in the supernatant of cultures of probiotic bacteria. It is believed to be a metabolite of the protease activity and inhibitory compounds that are produced by these bacteria. HHL inhibits the growth of Gram-negative bacteria such as E. coli and Salmonella, and may have potential as a probiotic agent for wastewater treatment. HHL has also been shown to have anti-inflammatory properties in some cases, but this effect varies depending on the strain and analytical methods used. HHL is not active against Gram-positive bacteria such as Lactobacillus or Bifidobacterium, or against strains with high levels of protease activity.
