3-(Allyloxy)propanoic acid is a carboxylic ester that is synthesized by the reaction of allyl chloride with 3-hydroxypropanoic acid. It is a monomer unit that can be used to form polymers and copolymers. This compound has been shown to have an antimicrobial effect against bacteria, yeast, and fungi. 3-(Allyloxy)propanoic acid inhibits the growth of microorganisms by binding to the carbon chains of their cell membranes. This leads to the formation of holes in the membranes that allow ions and water to leak out, which eventually causes cell death. 3-(Allyloxy)propanoic acid also inhibits divalent cations such as calcium and magnesium, which prevents bacterial cell growth. The most common use for this compound is as a food additive, where it is used in plastic wrap production or as an additive for animal feedstock.
