Description

1,3-Dimethylimidazolium methyl sulfate (DIMS) is a nonionic surfactant that has been used extensively in the food industry. The thermal expansion of DIMS is low, and it can be used as a solvent for organic compounds. DIMS is soluble in dipropyl ether and aromatic hydrocarbons and exhibits frequency shift at high concentrations. Hydrogen bonding interactions between the hydroxyl group on the dimethylimidazole ring and the carboxyl groups on the aliphatic chain make DIMS very viscous. It has been shown to be enzymatically inactive in Caco-2 cells, but this characteristic may change depending on the pH of the solution.
