Trioleina, noto anche come trioleato di glicerolo, è un trigliceride composto da glicerolo e tre molecole di acido oleico. È un liquido incolore o giallo pallido, viscoso a temperatura ambiente ed è insolubile in acqua ma solubile in solventi organici come etanolo e cloroformio. Trioleina si trova comunemente in vari grassi e oli naturali, in particolare nell'olio d'oliva e in altri oli vegetali. Serve come una importante molecola di stoccaggio di energia nei sistemi biologici ed è utilizzato nelle industrie alimentari e cosmetiche per le sue proprietà emollienti. In termini di struttura chimica, Trioleina presenta tre lunghe catene di idrocarburi, che contribuiscono alla sua natura idrofobica. La presenza di doppi legami nelle catene di acido oleico conferisce fluidità alla molecola, rendendola un componente chiave nella formazione di doppi strati lipidici nelle membrane cellulari. CAS:<p>Triolein is a mixture of the monoester, diester and technical grade. It is a model system for studying the biochemical composition of triacylglycerols. Triolein has been shown to inhibit tumor growth in mice by binding to basic proteins. This effect was observed using caproic acid as a control. The contents of triolein were analyzed by chromatography and gas-liquid chromatography. This analysis showed that triolein is composed of approximately 50% caprylic acid, and about 40% each of oleic acid and linoleic acid. The analytical method used was p-nitrophenyl phosphate spectrophotometry, which can be used to measure the amount of fatty acids in triolein.
