γ-Ciclodestrina è un oligosaccaride ciclico composto da otto unità di glucosio collegate da legami α-1,4-glicosidici, formando una struttura toroidale. È un membro della famiglia delle ciclodextrine, che include anche α- e β-ciclodextrine, ed è caratterizzato dal suo esterno idrofiliico e dalla cavità centrale idrofobica.
