Il trioleato di sorbitano, noto anche come tristearato di sorbitano, è un tensioattivo non ionico e un emulsionante comunemente utilizzato nelle formulazioni alimentari, cosmetiche e farmaceutiche. È derivato dal sorbitolo e dall'acido oleico, presentando una testa idrofila di sorbitano e tre code idrofobiche di oleato, che contribuiscono alla sua natura anfifilica. Questo composto è caratterizzato dalla sua capacità di ridurre la tensione superficiale, stabilizzare le emulsioni e migliorare la solubilità di vari ingredienti. Il trioleato di sorbitano è tipicamente un liquido viscoso o semisolido a temperatura ambiente ed è solubile negli oli, ma ha una solubilità limitata in acqua.
