Descrizione:
Cellobiosio è un disaccaride composto da due unità di glucosio collegate da un legame β-1,4-glicosidico. È uno zucchero riducente ed è classificato come un carboidrato. Cellobiosio si trova tipicamente nella struttura della cellulosa delle piante, dove funge da mattoncino. È solubile in acqua e la sua solubilità è influenzata dalla temperatura. La formula molecolare di Cellobiosio è C12H22O11 e ha un peso molecolare di circa 342,3 g/mol. In termini di proprietà fisiche, Cellobiosio appare come una polvere cristallina bianca. Non si trova comunemente in forma libera in natura, ma viene prodotto durante l'idrolisi enzimatica della cellulosa. Cellobiosio può essere ulteriormente idrolizzato in glucosio dall'enzima celobiasi.
