Cellobiosio è un disaccaride composto da due unità di glucosio collegate da un legame β-1,4-glicosidico. È uno zucchero riducente ed è classificato come un carboidrato. Cellobiosio si trova tipicamente nella struttura della cellulosa delle piante, dove funge da mattoncino. È solubile in acqua e la sua solubilità è influenzata dalla temperatura. La formula molecolare di Cellobiosio è C12H22O11 e ha un peso molecolare di circa 342,3 g/mol. In termini di proprietà fisiche, Cellobiosio appare come una polvere cristallina bianca.
