Aflatossina M2 è una micotossina prodotta da ceppi di fungo Aspergillus, in particolare Aspergillus flavus e Aspergillus parasiticus. È un metabolita secondario che può contaminare vari prodotti agricoli, in particolare i prodotti lattiero-caseari, poiché può essere trovato nel latte di animali che hanno ingerito mangimi contaminati con Aflatossina B1, una forma più potente di aflatossina. Aflatossina M2 è noto per le sue proprietà cancerogene, rappresentando rischi significativi per la salute umana e animale. È classificato come un potente epatotossico ed è associato a danni al fegato e cancro. Il composto è solubile in solventi organici e ha un peso molecolare relativamente basso.
