Natamicina

Descrizione:
Natamicina, noto anche come pimaricina, è un antibiotico macrolide polieno utilizzato principalmente come conservante naturale negli alimenti e come agente antifungino in varie applicazioni. È prodotto mediante fermentazione di alcune specie di Streptomyces. Natamicina è caratterizzato dalla sua capacità di inibire la crescita di un'ampia gamma di funghi e lieviti, rendendolo particolarmente efficace nel prevenire il deterioramento di prodotti lattiero-caseari, carni e prodotti da forno. Il composto agisce legandosi agli steroli nella membrana cellulare fungina, interrompendo l'integrità della membrana e portando alla morte cellulare. Natamicina è generalmente riconosciuto come sicuro (GRAS) per l'uso negli alimenti, e la sua efficacia è potenziata dalla sua bassa solubilità in acqua, che consente un'azione prolungata. Oltre alle sue applicazioni nella conservazione degli alimenti, Natamicina è utilizzato anche in ambito farmaceutico, in particolare nel trattamento delle infezioni fungine negli esseri umani e negli animali. La sua struttura chimica presenta un grande anello di lattone e più doppi legami coniugati, contribuendo alla sua attività biologica e stabilità in diverse condizioni.
