Riboflavina, noto anche come vitamina B2, è una vitamina solubile in acqua che svolge un ruolo cruciale nel metabolismo energetico e nel mantenimento di una pelle, occhi e funzioni nervose sani. È un composto cristallino di colore giallo-arancio con la formula chimica C17H20N4O6 e un peso molecolare di circa 376,37 g/mol. Riboflavina è sensibile alla luce e può degradarsi se esposto alla luce ultravioletta, motivo per cui viene spesso conservato in contenitori opachi. È solubile in acqua e leggermente solubile in alcol, ma insolubile in grassi e oli. Riboflavina è essenziale per la conversione di carboidrati, grassi e proteine in energia, poiché è un precursore delle coenzimi mononucleotide di flavina (FMN) e dinucleotide di flavina adenina (FAD). La carenza di Riboflavina può portare a sintomi come mal di gola, arrossamento e gonfiore del rivestimento della bocca e della gola, crepe sui bordi delle labbra (cheilosi) e infiammazione e arrossamento della lingua (lingua magenta). Si trova comunemente in alimenti come uova, prodotti lattiero-caseari, verdure a foglia verde e cereali fortificati.
