Acido mandelico, con il numero CAS 90-64-2, è un acido alfa-idrossi aromatico caratterizzato dalla sua apparente cristallina bianca e da un odore leggermente dolce. È solubile in acqua, alcol ed etere, il che ne aumenta l'utilità in varie applicazioni.
