δ-Gluconolattone, noto anche come glucono-δ-lattone (GDL), è un estere ciclico che si verifica naturalmente a partire dall'acido gluconico. È una polvere bianca e cristallina solubile in acqua e ha un sapore leggermente dolce. Il GDL è igroscopico, il che significa che può assorbire umidità dall'ambiente. È comunemente usato come additivo alimentare, fungendo da sequestrante, acidificante e agente lievitante in vari prodotti alimentari. In presenza di acqua, δ-Gluconolattone può idrolizzarsi per formare acido gluconico, che è un acido organico lieve.
