Descrizione:
Chitosano è un biopolimero derivato dalla chitina, che si trova negli esoscheletri di crostacei come gamberi e granchi. È caratterizzato dalla sua apparente polvere bianca a bianco sporco ed è solubile in soluzioni acide, rendendolo distinto dal suo precursore, la chitina, che è insolubile in acqua. Chitosano presenta diverse proprietà notevoli, tra cui biocompatibilità, biodegradabilità e non tossicità, che lo rendono adatto a varie applicazioni in medicina, agricoltura e industrie alimentari. La sua capacità di formare gel e film consente il suo utilizzo in sistemi di somministrazione di farmaci, medicazioni per ferite e come conservante alimentare.
