Chimostatina è un inibitore potente e selettivo delle serina proteasi, mirato in particolare alla quimotripsina e alle enzimi correlate. È un prodotto naturale derivato dalla fermentazione di alcuni actinobatteri, in particolare delle specie di Streptomyces. Chimostatina presenta una struttura unica che gli consente di legarsi efficacemente al sito attivo delle serina proteasi, impedendo così l'accesso al substrato e inibendo l'attività enzimatica.
