Ascorbigen is a naturally occurring compound that has antioxidative properties and has been shown to have anticarcinogenic, anti-inflammatory, and antimicrobial effects. Ascorbigen is found in a variety of food sources, such as citrus fruits and potatoes. It can be synthesized from ascorbic acid (vitamin C) by the enzyme ascorbate oxidase. The bound form of ascorbigen is more potent than the free form for inhibiting the enzyme activities of murine hepatoma cells. Docking studies have also been conducted using molecular modeling to determine electrochemical impedance spectroscopy results.
