Descrizione:Calcium benzoate trihydrate is a calcium salt of benzoic acid. It is used as a food preservative and as an antifungal agent. Calcium benzoate trihydrate binds to the carboxylate groups in the cell wall of fungi, preventing them from growing and reproducing. This prevents the production of fungal enzymes that are required for their survival. Calcium benzoate trihydrate also has been shown to bind to bacteria, leading to inhibition of growth. It is not toxic to mammals because it does not penetrate mammalian cells.
