Descrizione:Benzoic acid is a preservative that has been used for a long time and is found in sodium benzoate and potassium benzoate. It has been shown to inhibit the growth of bacteria, viruses, fungi, and parasites. Benzoic acid inhibits the enzyme activity of bacterial catalase and peroxidase. Benzoic acid binds to bacterial DNA with high affinity and is able to penetrate the cell membrane. The antimicrobial activity of benzoic acid is dependent on its concentration. At concentrations greater than 0.5%, it forms an inner salt with potassium ions, which can lead to the death of bacteria by inhibiting their growth or interfering with their metabolism.
