The nmr spectra of 2-(b-glucosyl)glycerol are diastereoisomeric due to the different arrangements of the stereochemistry at C2 and C3. 2-(b-Glucosyl)glycerol is stable in an electrolyte solution, but can be biotransformed into trehalose, which is a stabilised sugar molecule.
