The enzyme preparations are used for the conversion of fats, oils, and grease (FOG) into biodiesel fuel. 4-Hydoxy-3-(hydroxymethyl)benzaldehyde has been shown to have an activation energy of 156 kJ mol-1. This value indicates that its reaction rate will be slow at low temperatures and high at high temperatures.
