Isoamyl salicylate is a synthetic chemical, used as a food additive and flavoring agent. It is often used as an artificial butter flavor in imitation butter and margarine products. Isoamyl salicylate is also used to produce detergent compositions for dishwashing, laundry, and hard surface cleaning applications. The synthesis of isoamyl salicylate starts with the reaction of sodium carbonate and an alkanoic acid, such as octanoic acid or hexanoic acid. This leads to the formation of a fatty acid salt (e.g., sodium octadecanoate) and isoamyl alcohol. The fatty acid salt is then reacted with hydrochloric acid to form the final product: isoamyl salicylate.
