1-Iodoundecane is a hydrogen-bonding molecule that has been identified as an odorant-binding agent. It has been shown to have affinity constants for the hydroxyl group of a fatty acid and the nitrogen atoms of a nitro compound. The structural analysis of 1-iodoundecane shows that it has two hydrogen bonds, one intermolecular and one intramolecular, which are caused by its two hydroxyl groups. This molecule also contains a carbonyl group and two fluorine atoms, which give it its characteristic odor.
