3-Mercapto-2-pentanone is a chemical compound that is found in the essential oil of cinnamon. 3-Mercapto-2-pentanone has been shown to be hydrolyzed by esterases, as well as thermally and chemically. The enzyme hydrolysis proceeds through a nucleophilic attack on the carbonyl group of 3-mercapto-2-pentanone. This reaction releases two products: butyric acid and an alcohol. The carbon source for this reaction is maltol, which can be used to measure the concentration of 3-mercapto-2-pentanone.
