Descrizione:(E)-2-Octenal is a reactive compound that is produced by the degradation of unsaturated fatty acids. It has been shown to have antioxidant properties, which may be due to its ability to inhibit the activity of lipoxygenase and cyclooxygenase enzymes. (E)-2-Octenal also inhibits bacterial growth through genotoxic effects, such as DNA damage and mutations. The chemical ionization mass spectrometry method has been used for identification and quantification of (E)-2-octenal in a variety of natural products, including ethyl decanoate, caproic acid, and galacturonic acid.
