Potassium benzoate is a salt of benzoic acid and potassium. It has the ability to bind to DNA and inhibit the activity of enzymes that synthesize nucleic acids, such as picolinic acid. This inhibition leads to inhibition of RNA synthesis and protein synthesis, resulting in cell death. Potassium benzoate also has preservative properties, which can be used for food preservation. The carcinogenic potential of potassium benzoate has been found in some studies, but other studies have not found this effect.
