Descrizione:2,3,5-Trimethylpyrazine is a volatile organic compound that is used as an aroma to impart a roasted coffee flavor. It has been shown to be synthesized from the reaction of trimethyl and pyruvic acid in an enzymatic reaction using glutamate pyruvate transaminase. 2,3,5-Trimethylpyrazine can be analyzed by capillary gas chromatography with mass spectrometric detection (GC-MS) or high performance liquid chromatography with mass spectrometric detection (HPLC-MS). This compound can also be identified by its synchronous fluorescence emission spectrum. Analysis of this compound's chemical structure revealed a hydroxyl group on the methyl group and a protocatechuic acid moiety on the pyrazine ring.
