Descrizione:Stevioside is a high-purity steviol glycoside that is used in the food and pharmaceutical industries. Stevioside has been shown to have a variety of health benefits, including antioxidant, antimicrobial, and anti-inflammatory activities. It also has been shown to inhibit the growth of certain bacteria and fungi. This compound is an N-oxide with a hydroxyl group at carbon 12b. The reaction mechanism for this compound involves the formation of intramolecular hydrogen bonds between the hydroxyl group at carbon 12b and an oxygen atom from another molecule of stevioside. These intramolecular hydrogen bonds produce fluorescence when exposed to ultraviolet light (UV). Stevioside also has conformational properties that depend on its chirality; it exists as two enantiomers: D-stevioside and L-stevioside.
