Caffeoylmalic acid is a type of phenolic acid that is found in plants, where it is produced from chlorogenic acids. It has been shown to have inhibitory properties on skin cells and may be used as a dietary supplement. Caffeoylmalic acid can also be synthesized from protocatechuic acid, which is found in plants such as lettuce. This compound has been studied for its effects on dry weight and bioavailability, with low bioavailability being demonstrated by a surface methodology study. In vitro assays have shown that caffeoylmalic acid inhibits the activity of hydroxybenzoic acid, which may be useful for preventing the formation of carcinogens during cooking.
