Ac-Phe-NHMe is a fluorescent probe that has been used in carbohydrate binding studies. It interacts with the phosphate group of carbohydrates and changes its fluorescence properties. Ac-Phe-NHMe can be used for the detection of anomers, as well as for determining their relative configuration. The interaction of this compound with carbohydrates alters its fluorescence characteristics, which can be monitored at different temperatures and in the presence of various concentrations of competing ligands. This probe has also been used to study the interaction between n-acetyl-l-tyrosine and amide groups. Ac-Phe-NHMe's fluorescence properties were studied by absorption spectroscopy and nuclear magnetic resonance spectroscopy.
