H-Trp-Tyr-OH TFA salt is a food additive that has been shown to inhibit the oxidation of casein by light. It is an amino acid analog, which is a synthetic compound containing a single amino acid. The H-Trp-Tyr-OH TFA salt has been shown to protect against photooxidation of casein and other proteins in milk. It also inhibits the formation of exciplexes, which are complexes formed between tryptophan and trifluoroacetic acid. The H-Trp-Tyr-OH TFA salt has been shown to be stable at pH values ranging from 2 to 12 and at temperatures up to 300 degrees Celsius. This additive can be used as an emulsifier in food products such as mayonnaise, salad dressing, and margarine.
