Neocarrabiose is a complex carbohydrate that is synthesized by the methylation of carrageenan. It has a molecular weight of about 1,000 Daltons and consists of a linear chain of alternating units of D-galactose and D-glucuronic acid. Neocarrabiose is used in the production of polysaccharides such as heparin, glycosaminoglycans, and polysulfated glycosaminoglycans. The enzyme modification process converts the anomeric configuration to L-arabinofuranose in order to produce polysaccharides with high purity.
