Undecansäure, auch bekannt als Undecansäure, ist eine gerade Kettenfettsäure mit der chemischen Formel C11H22O2. Sie zeichnet sich durch einen langen hydrophoben Kohlenwasserstoffschwanz und eine Carbonsäurefunktion aus, die sowohl hydrophile als auch lipophile Eigenschaften verleiht.
