L-(-)-Sorbose, mit der CAS-Nummer 87-79-6, ist ein natürlich vorkommender Zucker und ein Ketose-Monosaccharid. Es ist ein Isomer von Fructose und wird als Zucker mit sechs Kohlenstoffatomen (Hexose) klassifiziert.
