Xylit, mit der CAS-Nummer 87-99-0, ist ein Zuckeralkohol (Polyol), der häufig als Süßstoff verwendet wird. Es handelt sich um einen weißen, kristallinen Feststoff, der in Wasser löslich ist und eine Süße hat, die mit der von Saccharose vergleichbar ist, jedoch mit weniger Kalorien. Xylit kommt natürlich in geringen Mengen in verschiedenen Früchten und Gemüse vor sowie in der Rinde von Birken, wo es erstmals extrahiert wurde.
