Beschreibung

Cinnamyl acetate is an organic compound with the chemical formula CH3C6H5COOC6H4CH2CH2COOCH3. It is a colorless liquid that has a pleasant odor and taste. Cinnamyl acetate is used as a flavoring agent in food, cosmetics, and perfumery. The synthesis of cinnamyl acetate proceeds through an asymmetric synthesis reaction with eugenol as the starting material. Eugenol reacts with acetic acid to form cinnamic acid, which reacts with the acetic acid again to form the product. This process requires light exposure for completion, which can be achieved by exposing the reaction mixture to sunlight or UV lamps. Cinnamyl acetate may also be produced through a fumigation process in which it is heated at high temperatures in an airtight container with solid dispersions such as ground cinnamon and cloves. This process is effective because of its ability to break down hydrogen bonding
