Aldehído dodecílico, también conocido como aldehído laurílico, es un aldehído alifático de cadena recta con la fórmula química C12H24O. Se caracteriza por una larga cadena hidrocarbonada hidrofóbica, que contribuye a sus propiedades surfactantes. Este compuesto aparece típicamente como un líquido incoloro a amarillo pálido con un olor graso distintivo, reminiscentes del ácido láurico. Aldehído dodecílico es soluble en disolventes orgánicos como etanol y éter, pero tiene una solubilidad limitada en agua debido a su naturaleza hidrofóbica. Se utiliza principalmente en la producción de surfactantes, emulsionantes y como agente saborizante en la industria alimentaria. Además, sirve como un intermedio en la síntesis de varios compuestos químicos. Se sabe que la sustancia es inflamable y debe ser manipulada con cuidado, siguiendo las pautas de seguridad adecuadas. Dodecanal is an odorant that can be used as a trifluoroacetic acid (TFA) fluorescence probe. It has been shown to inhibit the growth of human pathogens and human serum, and it also has antimicrobial properties. Dodecanal binds to the hydroxyl group of TFA and forms a covalent bond with the cysteine residues in proteins, inhibiting their function. The optimum concentration for dodecanal is 0.1 mM in human serum. Dodecanal will bind to caproic acid at concentrations of 2 mM or greater, which may affect its fluorescence properties. Dodecanal also binds to CD-1 mice when exposed to concentrations of 1 mM or greater, which may cause some interference with its fluorescence properties.
