Monopalmitina, también conocido como monopalmitato de glicerilo, es un glicerido derivado del ácido palmítico y glicerol. Es un sólido blanco a blanco amarillento a temperatura ambiente y se clasifica como un monoacilglicerol. Este compuesto se caracteriza por su cola hidrofóbica, que consiste en un ácido graso de cadena larga (ácido palmítico), y una cabeza hidrofílica, que es la parte de glicerol. Monopalmitina es soluble en disolventes orgánicos como etanol y cloroformo, pero tiene una solubilidad limitada en agua debido a su componente de ácido graso.
