Descripción:
Maltosa, monohidrato, con el número CAS 6363-53-7, es un disacárido compuesto por dos unidades de glucosa unidas por un enlace glucosídico α(1→4). Es un sólido cristalino blanco que es soluble en agua, formando una solución de sabor dulce. La maltosa se encuentra comúnmente en alimentos y bebidas malteadas, ya que se produce durante la descomposición enzimática del almidón. La forma monohidratada indica que cada molécula de maltosa está asociada con una molécula de agua, lo que puede influir en sus propiedades físicas, como la solubilidad y la estabilidad.
