Papaína

Descripción:
Papaína es una enzima proteolítica derivada del látex del fruto de papaya (Carica papaya). Se clasifica como una cisteína proteasa, lo que significa que corta enlaces peptídicos en proteínas a través de la acción de un residuo de cisteína en su sitio activo. Papaína exhibe una amplia especificidad de sustrato, lo que le permite hidrolizar diversas proteínas, haciéndola valiosa en el procesamiento de alimentos, la ablandamiento de carne y como ayuda digestiva. La enzima es típicamente activa en un rango de pH de 6 a 8 y es estable a temperaturas de hasta aproximadamente 60°C, aunque la exposición prolongada a altas temperaturas puede llevar a la desnaturalización. Papaína también es conocida por sus posibles aplicaciones terapéuticas, incluyendo la cicatrización de heridas y efectos antiinflamatorios.
