Papaína es una enzima proteolítica derivada del látex del fruto de papaya (Carica papaya). Se clasifica como una cisteína proteasa, lo que significa que corta enlaces peptídicos en proteínas a través de la acción de un residuo de cisteína en su sitio activo.
