Nitrosaminas y derivados
Las nitrosaminas son compuestos químicos que contienen un grupo nitroso (-NO) unido a un átomo de nitrógeno, generalmente en una estructura heterocíclica. Estas sustancias se forman comúnmente como subproductos de reacciones químicas, como la nitrosación de aminas en presencia de nitritos. Las nitrosaminas son conocidas por su alta toxicidad y propiedades cancerígenas, especialmente en organismos vivos. Debido a estos efectos, su presencia en productos alimenticios, cosméticos y en el tabaco está estrictamente regulada. Los derivados de nitrosamina, como los nitrosamidas, también muestran propiedades carcinogénicas y pueden formarse en procesos industriales, aunque algunos derivados se están investigando para su uso en tratamientos farmacológicos debido a su potencial en ciertas reacciones biológicas.
