Sorbic acid ethyl ester is a sorbate with an ester linkage. Sorbates are compounds that are used as food preservatives and can be found in items such as wine, cheese, and fruit juice. Sorbic acid ethyl ester is a white solid that has a melting point of 30°C. It is not toxic to the galleria mellonella larvae in toxicity studies and does not have any effect on the heart in congestive heart failure studies. However, it may be toxic to the liver due to its ability to react with amines. Sorbic acid ethyl ester reacts with hydroxyl groups present in fatty acids to form hydrochloric acid and caproic acid. This reaction mechanism has been shown using solid phase microextraction (SPME) with hydrochloric acid gas on a fatty acid sample.
