b-Carotene is a carotenoid that is one of the most important dietary antioxidants. It has a constant pressure of 1 atm, which makes it an excellent antioxidant. b-Carotene is found in plants, especially fruits and vegetables, and is converted to vitamin A in the liver. It has bioactive properties that are important for eye health. For example, it can help prevent erythropoietic protoporphyria (EPP) and decrease the risk of cancer. The mechanism of action of b-carotene involves its conversion to dehydroascorbic acid by enzymes in the body, which then binds to proteins or DNA to prevent oxidation. It also forms a film on fat droplets in cells called liposomes, which slows down lipid peroxidation and oxidation reactions.
