CAS :3-Deoxygalactosone is a reactive compound that is formed by the reaction of glyoxal and galactose. The glyoxal molecule reacts with the hydroxyl group on the galactose to form a new aldehyde, which can then react with another molecule of glyoxal or galactose to form 3-deoxygalactosone. 3-Deoxygalactosone has been shown to have health effects in clinical studies. It also has been shown to decrease the dry weight of rats fed a high-fat diet.
