Description :
Riboflavine, également connu sous le nom de vitamine B2, est une vitamine hydrosoluble qui joue un rôle crucial dans le métabolisme énergétique et le maintien d'une peau, d'yeux et de fonctions nerveuses sains. C'est un composé cristallin jaune-orange avec la formule chimique C17H20N4O6 et un poids moléculaire d'environ 376,37 g/mol. Riboflavine est sensible à la lumière et peut se dégrader lorsqu'il est exposé à la lumière ultraviolette, c'est pourquoi il est souvent stocké dans des contenants opaques. Il est soluble dans l'eau et légèrement soluble dans l'alcool, mais insoluble dans les graisses et les huiles. Riboflavine est essentiel pour la conversion des glucides, des graisses et des protéines en énergie, car il est un précurseur des coenzymes mononucléotide de flavine (FMN) et dinucléotide de flavine adénine (FAD).
