• Description: Gallic acid stearyl ester is a fatty acid with a hydroxyl group at the 3-position. It is a model system for the investigation of the cytotoxicity of squamous cell carcinoma and carcinoma cell lines. It has been shown to inhibit microbial growth by binding to bacterial membranes and inhibiting membrane permeability in an isoamyl gallate-independent manner. The antimicrobial activity of gallic acid stearyl ester is due to its ability to form pores in bacterial membranes, which leads to their collapse. This compound also has anti-inflammatory properties, which are most likely due to its ability to inhibit prostaglandin synthesis. Gallic acid stearyl ester can be used as a dietary supplement for pregnant cows because it does not interfere with fetal bovine metabolism.
